A hydrometer measures the specific gravity of a liquid sample, converted to brix. It is used to test both juice and wine as it progresses through fermentation. Brix is a measurement of the concentration of sucrose in water, so 20 degrees brix is 20 grams of sucrose in 100 grams of solution.
